Breakfast was two microwave poached eggs over spinach and salsa with a cara cara orange.
Lunch was a homemade pizza. I rubbed a little evoo, s&p, garlic powder, and Italian seasoning on a whole wheat flatbread then baked at 350 for about 5 min. Top with mozzarella, roma tomatoes, and basil then bake until cheese is melted. Sliced apple sprinkled with cinnamon on the side.
Dinner was oven ‘fried’chicken, a baked sweet potato, and Ina Garden’s roasted green beans.
