Leftover spin – Veggie Soup Puree

I added a few more leftovers to the Garden Vegetable Soup, pureed it, and simmered it for about ten minutes, and it tasted like a whole new soup. I wasn’t sure about blending it, but I loved the result, and it didn’t feel like eating the same thing everyday.
I tried to make a cute tortilla cheese roll by rolling a corn tortilla around a piece of string cheese and baking for ten minutes, but cold tortillas are not flexible. Next time I’ll heat the tortilla first. It tasted wonderful – cheesy inside, crunchy outside – but it didn’t look as cute as I imagined. I sliced an asian pear to go with lunch but, since I became satisfied before finishing 😊, half the pear is left.
