Egg, avocado, and tomato salad


Simple breakfast (or anytime) salad that is delicious, nutritious, and easy to adjust to your tastes or on-hand ingredients. Can also be made ahead.

Boil eggs the way you enjoy them. See this Link if you have trouble getting them just right. Peel, salt, and pepper.

Slice 1/4 to 1/2 avacado per serving. Sprinkle with lemon juice and salt. Storing cut avocado.

Prepare a tomato salad: I chop one plum tomato per serving. Add vegetables/herbs you like and have on hand including green onion, bell peppers, cucumbers, cilantro, and basil, or just use tomatoes. For dressing I like a squirt of lemon juice, a dot of sriracha, and cilantro. It is also good with balsamic vinaigrette and basil.

Slice the eggs and avacado, then top with the tomato mix and enjoy. I usually serve with a piece of fruit. This tomato salad is also delicious with cottage cheese.
