Maple-Banana Baked Oatmeal by Serious Eats


A treat for the senses, this upgraded oatmeal made my home smell like freshly baked banana bread. The oats were al dente, and baking the banana gave it a delicious aroma and texture. This was a little sweet to me, without adding any additional syrup after baking as the recipe suggests, but the sweetness contrasted nicely with the berries.

RecipeĀ here. Changes I will make next time: cut maple syrup in half, reduce milk to one cup, and omit brown sugar on top. I sprinkled the top with cinnamon and added vanilla extract to the egg mixture.
