Spinach Salad with smoky mustard vinaigrette


With a hint of crunchy bacon, creamy avocado, and a bright and super easy dressing made from pantry staples, this salad packs nutrients and decadence onto one 348 calorie plate. 


  • 2 cups of spinach
  • 2 chopped boiled eggs
  • 1 slice bacon, chopped, grease reserved.
  • 1/4 avocado, chopped
  • Salt and pepper
  • 1 tbs red wine vinegar
  • 1 tsp whole grain prepared mustard

Layer salad ingredients. Salt and pepper the spinach, egg, and avocado. To make the dressing, combine 1 teaspoon of the warm bacon grease with the vinegar and mustard.

In defense of bacon, the slice of bacon and grease end up costing about 110 calories, less than a serving of most chemical-laced bottled salad dressings, and it tastes much better.
